San Francisco Chinatown Roaster Breast

1 tablespoon oriental chili-garlic sauce
1 tablespoon soy sauce
½ teaspoon ground ginger
1 PERDUE ® OVEN STUFFER ® Roaster Breast (about 2 ¾ pounds)
Recipe
Prepare charcoal or gas grill for indirect cooking, or preheat oven to 425° F. If using gas grill, follow manufacturer’s directions. If using charcoal grill, place drip pan in center at bottom of grill. When coals are hot, arrange 15 to 20 of them at either end of drip pan. Combine chili-garlic paste, soy sauce and ginger. Rub breast all over with mixture. Place breast, skin side up, on grill over drip pan. If roasting, place in shallow roasting pan and place pan in oven; reduce temperature to 375° F. Grill, covered, or roast 60 to 75 minutes or until meat thermometer inserted in thickest part of breast registers 170° F and juices run clear when breast is pierced.
