    2 boneless chicken breasts, each weighing 1/3 lb. skinned
    2 slices Parma Ham
    2 thin slices Gruyere cheese
    1/2 leek, cut into thin strips
    1/2 red pepper
    2 tablespoons dry vermouth or sherry
    2 tablespoons whipping cream (optional)
    1 tablespoon butter
    Salt and pepper to taste

    Slit the chicken breasts neatly in half horizontally. Insert the ham and cheese, close up and reform. Blanch the leek strips in boiling water for 1 minute; drain well. Set aside a few strips. Place the remaining leek strips on 2 sheets of waxed paper and arrange the chicken on top. Place peppers on top of the chicken with reserved leeks. Season with salt and pepper, pour over the vermouth or sherry and cream, if using, and dot with the butter. Fold paper over the chicken and twist the ends. Place on a baking sheet and cook in a 350 degree oven for about 20 minutes, until tender. Keep warm until required. Serve with buttered rice sprinkled with parsley, or pasta bows, and a salad. Serves 2.
