    Sizzlin' Crusty Chicken Oriental

    List of Ingredients




    2 tablespoons Hoisin sauce
    2 tablespoons Chinese-style hot mustard
    1/2 cup real fat-free egg substitute or equal to 2 large eggs
    3/4 cup plain dried bread crumbs
    2 teaspoons dried thyme
    3 teaspoons Olde Westport Sizzlin' Sunset Cajun Spice Blend, divided
    2 tablespoons grated Parmesan cheese
    2 teaspoons vegetable oil
    6 boneless skinless chicken breast halves, trimmed (about 5 ounces each)
    1/2 cup light sour cream (not fat-free)
    2 tablespoons tomato paste
    1 tablespoon light soy sauce
    2 roma (plum) tomatoes, diced (about 1 1/2 cups)

    Recipe



    In a shallow dish, combine first three ingredients. In a another shallow dish, blend bread crumbs, thyme, 1 teaspoon Olde Westport Sizzlin' Sunset Cajun Spice Blend, Parmesan cheese and vegetable oil. Dip chicken breasts in egg mixture and then into bread crumbs. Arrange chicken in a baking dish, bake uncovered in a 450 degree oven 20 minutes or until bread crumb coating is crispy and chicken is cooked through. Meanwhile, in a small saucepan, add sour cream, tomato paste, remaining mustard, soy sauce, half of the diced tomatoes and remaining 2 teaspoons Olde Westport Sizzlin' Sunset Cajun Spice Blend. Cook just until heated through (don't boil). Place chicken on individual serving plates, spoon sauce over top, sprinkle with remaining tomatoes.

    Serves 6.
