List of Ingredients
1/2 cup mango, diced
1 chipotle pepper
1 jalapeño pepper, sliced
1/4 cup tomatoes, diced
1/8 cup scallions, chopped
1 Tbs. habanero pepper sauce
1/4 cup Bloody Mary mix
1/2 tsp. ground cumin
1 tsp. cilantro, chopped
2 Diane's® Premium Blend Tortillas
1 boneless, skinless chicken breast, grilled and sliced
Recipe
Preheat a small skillet over medium-high heat.
Sauté mango, chipotle and jalapeño pepper, diced tomatoes and scallions until hot throughout.
Add pepper sauce, Bloody Mary mix, cumin and 1 tsp. of cilantro; bring to the boil.
Julienne-cut tortillas into 1/4-inch strips.
Add tortilla strips to ingredients in skillet and sauté for about 20 seconds, tossing to coat evenly.
Transfer to plate and top with grilled, sliced chicken breast. Garnish with chopped cilantro, if desired.
