    Sweet Moroccan Chicken, Texas Style

    List of Ingredients




    Chicken topping ingredients

    1/2 lemon
    1/4 cup almonds
    1/2 cup drained, cubed pineapple
    1/2 cup dried apricots
    1/2 cup raisins
    1/4 cup honey
    1/4 cup dried tomatoes
    Other ingredients

    2 tablespoons cinnamon
    package couscous
    10-12 pieces of chicken, dark or light

    Recipe



    Mix together all chicken topping ingredients. Sometimes you might want to soak the tomatoes in a little olive oil to make them soft, or if you prefer chewy, just add with rest.

    Roll skinned chicken, well thawed, in the cinnamon. Smush the powder into the meat with your fingers. Place in appropriate size pan, 12x15 or so, but so chicken is touching all over.

    Pour chicken topping ingredients over skinned chicken parts. Bake at 375 degrees for about an hour.

    Serve over couscous prepared according to directions on box.
