6oz Chicken breast (tenderized)
2oz Diced red onion
2oz Sautéed button mushrooms
2oz Diced tomato
10oz. Fettuccini
3oz (approx.) Heavy whipping cream
2Tbl Olive oil
1Tbl. Cold butter

Dice chicken breast (approx. 1/2in. x 1/2in.), liberally dust with Cajun spices, sauté in oil over med-high heat.
When chicken about 2min. from being fully cooked (approx. 5min.) add red onions.
After another 2-3min. add sautéed mushrooms and heavy cream, cook for about 1.5 min.
Add butter and stir until incorporated fully into the sauce. Add fettuccini and tomatoes, toss and plate. Garnish with parsley or chopped scallions.
