Wok With Me Citrus Chicken

1-1/2 pounds chicken breast cut into strips or cubes
dry sherry
2 tablespoons cornstarch
4 tablespoons brown sugar
¼ cup soy sauce
2 tablespoons cider vinegar
2 tablespoons peanut oil
3 large garlic cloves crushed
1 tablespoon fresh finely chopped ginger
1 large onion coarsely chopped
1 red bell pepper cut into
1-inch squares
½ pound fresh whole snow peas, tops removed
6 fresh kumquats sliced into rings seeds discarded
8 fresh water chestnuts peeled and sliced
2 cup canned chicken brothRecipe
In a small bowl mix together sherry, cornstarch, brown sugar, soy sauce, vinegar and enough chicken broth to make 1 cup. Heat oil in wok on high heat and brown chicken. Add onion, garlic, ginger and red pepper and cook until onion is somewhat tender. Add the liquid mixture and stir until thick adding chicken broth as needed to thin. Add snow peas, kumquats, and water chestnuts and simmer 3 more minutes. Serve over rice.
