Portions: 8 cups
List of Ingredients
3 tbs. peanut oil
3 chopped scallions
3 large brown mushrooms sliced
1 chopped seeded tomato
1 cup chopped spinach (optional)
8 cups of water
1 veggie bullion cube
1 8oz package of silken tofu, cut into small cubes
Package of Ramen noodles
Chopped cilantro
Recipe
. Heat the oil in a soup pot over medium heat for about 30 seconds.
2. Add the vegetables and sautee for about 5 minutes. Start adding water slowly and then increase the heat to medium high.
3. Add the veggie bullion cube and the tofu. A
4. Add the Ramon noodles once the water boils. Boil for 3 minutes, then take off the heat and add contents of the Ramen noodle spice package.
5. Serve with chopped cilantro
