    9 cup(s) chicken broth
    6 Tbsp. cilantro chopped
    6-3/4 cup(s) coconut milk
    2-1/2 Tbsp. garlic chopped
    2-1/2 Tbsp. ginger, fresh chopped
    72 whole grilled chicken tenders
    2 tsp. hot pepper
    4-1/2 cup(s) pineapple chunks canned
    4-1/2 cup(s) red peppers julienne, sautéed
    1-1/8 cup(s) scallions chopped
    18 cup(s) UNCLE BEN'S® ORIGINALCONVERTED® Brand Rice cooked

    Cook rice according to package directions. Hold warm.
    Drain pineapple, reserving both liquid and pineapple until needed.

    To prepare sauce, combine coconut milk, chicken broth, ginger, garlic, hot pepper and 4 1/2 cups of reserved pineapple juice. Simmer 5 minutes. Hold warm for service.

    For each serving place 1 cup cooked rice in a bowl. Arrange 4 pieces chicken, 1/4 cup red pepper and 1/4 cup pineapple over rice. Ladle 1/2 cup of sauce over chicken. Garnish with 1 Tbsp. scallions and 1 tsp. Cilantro.


    Serves 18!
