    1 - 1 1/2 pounds lean pork cut into small cubes dice size
    flour
    salt
    pepper
    peanut or vegetable oil
    1 celery stalk
    1 small onion
    1 cup chicken stock or water to deglaze the pan
    Gravy Master (optional)
    cooked white rice

    Dredge pork pieces heavily in flour with salt and pepper added Let thecoated cubes "set" while oil heats. Pour oil about 1/4" deep in a heavypan Place meat in oil to brown on all sides Some of the extra flour can goin to make an oil roux Add onion and celery to browned meat with a bit more salt and pepper Use one cup chicken stock or water to deglaze the pan Stir well but gently Cover and cook slowly till meat is very soft If you prefer a darker color add Gravy Master When i was a child, this mixture was served on overcooked white rice. In some homes, the cooked rice was
    stirred into the meat mixture before serving.
