Kokomos Fried Rice

List of Ingredients
2 eggs, slightly beaten
2 tablespoons peanut oil
1 medium white onion, diced small
3 cups cooked jasmine rice, cooled
1 tablespoon Knorr Chinese Chicken Powder
2 tablespoons soy sauce
Dash white pepper
1⁄2 cup frozen green peas, thawed
1⁄2 cup iceberg lettuce, julienned
1⁄2 cup carrots, julienned
1 cup of your choice: cooked beef, chicken, BBQ pork, crab, shrimp or Chinese vegetables
2 green onions, sliced
Recipe
Heat wok or large pan until very hot. Add 1 tablespoon peanut oil. Stir in eggs and cook until done but still moist, remove and set aside.
Add remaining peanut oil, add chopped white onion, stir-fry 1 minute. Add cooked rice, stir-fry 1 minute. Add remaining ingredients except eggs and green onion; stir-fry until food is hot. Mix in eggs and stir in until cooked. Garnish with green onions and serve.
