    List of Ingredients




    2 cups short grain brown rice
    1 1/2 teaspoons extra virgin olive oil
    2 cloves garlic, minced
    1 medium onion, chopped
    2 tomatoes, peeled, seeded and chopped (optional)
    1 teaspoon fresh chili pepper, minced (optional)
    1/4 teaspoon ground cumin
    4 cups water
    1/2 teaspoon sea salt
    3 tablespoons fresh coriander leaves, chopped

    Soak rice for 1 hour. Drain.

    Heat oil in a medium-size heavy pot. Add garlic and onion, and sauté 2-3 minutes. Add tomato, chili pepper, cumin, rice, water and salt. Cover pot.

    Bring to a boil, reduce heat to low and place a flame deflector under the pot.

    Cook for 1 hour. Remove from the heat and allow to rest, covered, for 15 minutes. Mix in fresh coriander leaves and serve.
