Pineapple Asia Hot & Spicy Rice

4 cups water
1 Tablespoon vegetable oil
1 teaspoon salt
2 cups long-grain rice
1 can (1 pound 4 ounces) crushed pineapple, drained and juices reserved 3 scallions thinly sliced scallions 1 medium sized carrot, grated or cut into fine julienne 2 Tablespoons soy sauce 1 teaspoon Asian chili garlic sauce 1/2 cup frozen peas, thawed 2 Tablespoons snipped fresh chives (use Asian Garlic Chives if
available)
Recipe
Bring water to the boil, add oil and salt, then add rice and stir.
Reduce heat to medium and cover. Cook for 20 minutes until all liquid is absorbed. Set off the heat and leave undisturbed for 5 minutes.
Fluff rice with a fork and stir in the pineapple. Just before serving, add the scallion, carrot, soy, chili sauce and 2 Tablespoons of the reserved pineapple juice, then the peas and chives.
Serves 8.
