# 1 C chopped onion
# 1/4 C butter
# 4 C cooked rice
# 2 C sour cream
# 1 C cottage cheese
# 1 bay leaf
# Salt and pepper
# 2 (8-oz.) cans whole California chilis, drained
# 2 C grated Cheddar cheeseRecipe
Sauté onion in butter in large skillet about 5 minutes. Remove from heat. Stir in rice, sour cream, cottage cheese, bay leaf and salt and pepper, to taste. Cut unseeded chilis into strips.
In a greased 2-quart casserole, put a layer of rice mixture, then a layer of chilis and 2/3 cup cheese.
Repeat layering with rice, chilis, 2/3 cup cheese and remaining rice on top. Bake in a 375-degree oven 25 minutes. Sprinkle with remaining cheese. Bake 10 minutes longer. Makes 8 servings.
