List of Ingredients
2 TBSPS sesame oil
1 CUP green onion, chopped
2 TBSPS prepared ginger
2 CUPS julienned chicken, boneless, evenly cut
1 lime juiced
1 ½ cups basic tomato sauce
1 CUP stock
3 CUPS cooked rice
1 CUP fresh basil, chopped
1 CUP Swiss cheese, grated
S&P to taste
GARNISH with chopped olives and black pepper.
Recipe
In a large sauté pan cook the onions until soft in the sesame oil.
Then add the ginger and sauté for 2-3 minutes.
Next add the chicken and sauté until they start to cook.
Next add the limejuice, tomato sauce, stock and bring to a boil.
Then add the rice, basil, and Swiss cheese, until you get a nice creamy mixture. This is really a quick way to fake a risotto-like consistency.
