    List of Ingredients




    4 tablespoons butter
    1 tablespoon minced garlic
    1 green bell pepper -- chopped fine
    1 red bell pepper -- chopped fine
    1/2 onion -- chopped fine
    1 cup white rice
    1 teaspoon ground cumin
    1 teaspoon chili powder
    1 cup tomato juice
    1 cup chicken broth
    1 tablespoon chopped fresh cilantro

    Recipe



    In a medium saucepan, melt butter. Add garlic, peppers and onions. Cook, stirring frequently, until tender, about 5 minutes. Add rice and stir to coat. Stir in cumin and chili powder. Add tomato juice and chicken broth. Bring to a boil, reduce heat, cover and simmer until liquid is absorbed and rice is tender, about 15-20 minutes. Sprinkle with cilantro.

    Makes 4 servings.
