    MAMA'S ROASTED POTATOES

    1 ½ cups bread crumbs
    ½ cup olive oil
    Salt and freshly ground black pepper
    4 pounds Idaho potatoes
    2 cups shredded mozzarella
    Preheat the oven to 350° F.

    Recipe



    In a small bowl, mix together the bread crumbs, 1/2 cup olive oil, and a pinch of salt and pepper.

    Peel the potatoes and cut them in fourths lengthwise. Cover them generously with the bread crumb mixture. Place the slices snugly on a sheet pan or lasagna pan and bake for 45 minutes to 1 hour. Remove and sprinkle the shredded mozzarella and grated Parmigiano-Reggiano on top of the potatoes.

    Turn the oven up to 400° F and put the potatoes back in. Bake them until the cheese is melted and beginning to brown, about 3 minutes
