    Peach Gelato

    ROCCO'S RADIO RECIPES

    List of Ingredients




    Yield: 1 pint

    Gelato base:
    1 teaspoon powder gelatin
    1/2 cup cold water
    1 qt whole milk
    1/2 qt heavy cream
    6 tablespoons corn syrup
    2/3 cup dry milk
    1 1/3 cup granulated sugar

    Recipe



    Combine gelatin and water in a bowl. Set aside.

    Combine milk, cream, corn syrup, dry milk, and sugar in a saucepot and place over low flame. Heat but do not boil or even simmer mixture. Remove from heat.

    Add gelatin (water and gelatin powder will have combined to form a thick, jelly-like substance.)

    Let mixture cool to room temperature. Add peach mixture (below).

    Turn in ice cream machine.

    Peach mixture:
    1 pint peach puree, strained
    juice of 1 lemon
    1 teaspoon vanilla

    Mix ingredients well.
