Shrimp Scampi with Grilled Bread

List of Ingredients
2/3 ciabatta, cut in half crosswise and in half lengthwise
6 cloves garlic
2/3 cup extra virgin olive oil
salt and pepper to taste
1/2 stick butter
1 1/2 pounds shrimp (u16-20s), peeled and de-veined
3 lemons, juiced
1/3 cup parsley, chopped
Recipe
Heat grill. Rub 2 cloves of garlic into the bread to impart its flavor. Brush bread with 2 tablespoons of the olive oil and season with salt and pepper. Grill on both sides until slightly charred and crunchy. Set aside. Meanwhile, in a large sauté pan, heat butter and olive oil. Add garlic and cook for about 30 seconds, do not allow to brown. Season shrimp with salt and pepper and add to pan. After about 1 1/2 minutes, flip shrimp and add lemon juice to pan. Simmer until shrimp are just cooked through, about 1 1/2 more minutes. Add parsley to pan and season if necessary. To serve, place a slice of bread down on 4 plates. Divide shrimp evenly among bread slices and generously spoon sauce on top allowing it to be soaked up by the bread.
