    Serves 4
    My grandmother used to make zabaglione with a fresh egg for my sister, Maria, who was anemic. The men had it in the morning with their coffee, at night with marsala, and with fruit anytime.
    4 extra-large egg yolks
    4 tablespoons sugar
    2/3 cup dry marsala

    Recipe



    In a double boiler over low heat, stir the egg yolks and sugar together, until the sugar is completely mixed into the yolks and the color lightens. Add the marsala slowly, stirring constantly. Do not allow it to boil! Remove the pan from the heat as soon as the zabaglione starts to coat the back of a spoon. Transfer it to a new bowl to cool, then serve.
