    List of Ingredients




    1 can (14-1/2 oz.) DEL MONTE® Diced Tomatoes
    3 Tbsp. salsa
    1/4 cup fresh lime juice or red wine vinegar
    1 lb. boneless pork chops, thinly sliced
    3 Tbsp. olive oil
    1 onion, thinly sliced
    1 clove garlic, minced
    6 cups loosely packed torn lettuce

    Recipe



    # Drain tomatoes reserving 1/3 cup liquid. Add salsa and lime juice to reserved liquid.
    # Pour 1/3 cup over meat; marinate 1/2 hour. Drain meat.
    # Heat 1 tablespoon oil in skillet over high heat. Brown pork. Stir in onion and garlic; cook until meat is done and onion is soft.
    # Stir remaining 2 tablepoons oil into reserved salsa mixture.
    # Toss warm meat mixture with lettuce, tomatoes, and reserved salsa dressing. Season to taste with salt and pepper, if desired. Garnish with avocado, cilantro and lime wedges, if desired.
