    Abalone Mushroom Lettuce Cup

    The abalone mushroom can be found fresh in the produce department in most grocery stores when it is in season, which is at the present time. The mushroom looks and taste like abalone with the right seasoning. This is a perfect dish for April Fools Day. Your guest will think it is abalone you are serving!!

    List of Ingredients




    8 oz. Abalone mushroom, diced small
    4 oz. celery, diced small
    2 oz. red bell pepper, diced small
    4 oz. ****ake mushrooms, diced small
    1 TBL. pine nuts
    1 tea oyster sauce
    1 TBL chicken broth
    1 tea sugar
    12 ea lettuce leaf, cut into cups
    12 ea dry shrimp flavor chips
    2 cup vegetable oil

    Recipe



    Prepare the shrimp flavor chips:

    In a wok over medium heat, add approximately two cups of vegetable oil. Heat the oil until below smoking.
    Add the shrimp chips. They will puff up very quickly.
    Turn off the heat. Using slotted spoon, take the chips out and lay on paper towel to drain off excess oil.
    The oil when cooled, can be stored in a clean jar and reused again.

    Using clean pinking shears cut the lettuce into small cups that would fit in the puffed shrimp chips.

    In a wok over medium heat, add 1 tablespoon of the saved oil from above.
    Heat the oil until below smoking.
    Add the abalone mushroom, diced celery, red bell pepper and ****ake mushrooms and pine nuts. Stir fry very quickly for 1 minute.
    Add the chicken broth, oyster sauce and sugar. Stir to mix very quickly.
    Turn off the heat, divide and spoon the mixture into the twelve lettuce cups.

    To serve:
    Put each lettuce cup with the abalone mushroom mixture on top of a puffed shimp chip. Repeat to make 12 cups. Serve at once. Makes 4 servings
