8 oz. arugula
3/4 cup diced tomatoes
2 Tbsp. fresh basil, diced
1 Tbsp. virgin olive oil
8 artichoke hearts
3/4 cup Parmesan cheese (flakes)Recipe
Remove stems from arugula, clean and pat dry. Mix tomatoes, basil and oil together. Toss arugula with dressing of your choice (balsamic vinaigrette or creamy gorgonzola are good). Arrange arugula on plates topped with tomato and basil mixture. Lightly cover salads with Parmesan flakes. Cut artichokes in half and arrange around salad.
Makes 4 salads.
