Salad
1/2 pound Spring mix
1 cup Canned black beans, drained and rinsed
1 cup Thawed frozen corn
1 cup Diced tomatoes
1 cup Cucumbers, sliced
1/2 cup Bonehead dressing
6 Yellow corn tortillas
Dressing
3/4 cup Olive oil
1-1/4 cup Balsamic vinegar
1 tsp Black pepper
1 tsp Granulated garlic
1 tsp Dried oregano
1 tsp Salt
1 16-oz. squeeze bottleRecipe
. Cut tortillas into 1/4" strips. Fry in 375 degree oil until crisp. Place strips on paper towels and set aside.
2. In large mixing bowl, add spring mix, beans, corn, tomatoes, and cucumbers.
3. Add dressing to salad and toss.
4. Top with tortilla strips.
Serving suggestion: Top with grilled chicken. This will serve a family of 4.
For dressing:
Combine all the ingredients in the squeeze bottle and shake.
