    CAESAR'S GIFT TO SALAD

    List of Ingredients






    3 boneless half chicken breasts
    1/2 cup of your favorite marinade or Caesar dressing
    3 oz. Heluva® Good Swiss Cheese, cubed
    3 oz. Heluva® Good Cheddar Cheese, cubed
    8 cups Romaine lettuce, chopped
    3/4 cup Caesar dressing
    3/4 cup croutons
    4 tablespoons grated parmesan cheese

    Marinate chicken breasts in 1/2 cup of your favorite marinade or Caesar dressing for several hours or overnight in the refrigerator. Grill or broil chicken until cooked through. Cut into strips and set aside. Toss together cubed cheeses, romaine, 3/4 cup of Caesar dressing & croutons. Arrange chicken strips over each portion. Sprinkle with parmesan cheese. Serve immediately.

    Homemade Caesar Dressing (optional)
    Makes 1 cup



    5 anchovy filets
    2 large cloves garlic
    1 tablespoon Dijon mustard
    3 tablespoons lemon juice
    1/2 teaspoon Worcestershire Sauce
    2 tablespoons liquid egg substitute
    3/4 cup vegetable oil

    Chop anchovies and garlic in a food processor. Add all other ingredients except oil. Mix with several pulses. With the processor running, add oil in a thin stream. Use as needed, store in the refrigerator for up to one week.

    Serves 4.
