Carrot Raisin Salad

2-3 C. carrots, peeled and grated (3-4 medium size)
1 T. lemon juice
1/2 C. raisins, plumped 1-2 hours in hot water
1/3 C. mayonnaise
1 T. ketchup
Recipe
First, toss the grated carrots with the lemon juice. Add the drained raisins, the mayonnaise and the ketchup and stir to combine the ingredients well. Serve with grilled pork or beef.
Serves 3-4.
HINTS:
For the best flavors, make this salad the night before you serve it.
