Curried turkey salad

1 cup walnuts or pecans
4 cups chopped, cooked turkey
2 large apples, such as Gala or Braeburn, chopped, about 2 cups
2 ribs celery, chopped, about 1 cup
2 or 3 green onions, chopped
1/2 cup raisins
1-1/2 cups mayonnaise, or to taste
1 tablespoon curry powder

In an oven, toaster oven or microwave, toast the nuts until light brown and aromatic (about 8 to 10 minutes at 350 degrees). Cool.
Meanwhile, put turkey into a large bowl. Cut the apples into quarters, remove the cores and chop the apple into 1/2-inch pieces. Cut celery into similar-sized pieces. Trim green onions, mince and add to bowl. Roughly chop the raisins and add to bowl.
Stir together mayonnaise, curry powder, 1 teaspoon salt and pepper (or a little cayenne pepper). Stir into turkey mixture. Taste and add more salt and pepper if necessary.
Serves 6 to 8.
Serve with green beans and storebought dinner rolls or biscuits.
