Dom’s Hot Potato and Sausage Salad

List of Ingredients
5 medium potatoes, peeled and cut in half
4 tablespoons olive oil
1 pound polish sausage, sliced ¼ inch thick
1 medium onion, chopped
1 green pepper, chopped
4 garlic cloves, finely chopped
1/3 cup red wine vinegar
1/3 cup mayonnaise
salt and pepper to taste
2 teaspoons parsley, finely chopped
Recipe
Boil potatoes approximately 15 minutes. Drain, cut into bite size pieces and
place in a large serving bowl and cover to keep warm.
In a large skillet, heat 2 tablespoons of the olive oil and cook sausage,
stirring frequently until lightly browned. Remove from heat, drain and add
sausage to potatoes. In a skillet, heat the remaining olive oil and sauté onion
and green pepper until crisp and tender. Mix in garlic, vinegar, mayo, salt,
pepper and parsley. Heat gently, continuing to mix for one minute.
Pour mixture over potatoes and sausage. Toss lightly and serve warm.
Serves 6-8, and can easily be doubled for a crowd.
