    HONEY MUSTARD GRILLED CHICKEN SALAD

    List of Ingredients




    2 ea./6 oz. Boneless/Skinless Chicken Breast (grilled)
    1/2 Head Romaine Lettuce (torn into bite sized pieces)
    1/2 Head Ice-Berg Lettuce (torn into bite sized pieces)
    4oz. Broccoli cooked tender
    4 oz. Cauliflower cooked tender
    1 small carrot shredded
    2 oranges, peeled, thinly sliced into rings
    1/2 cup strawberries, sliced
    1/2 cup of your favorite honey mustard dressing

    Recipe



    1. Combine 1/4 cup of dressing with lettuce, broccoli, and cauliflower. Toss in a salad bowl and refrigerate
    2. Grill chicken breast for 3 minutes each side or until tender and moist (make sure not to over cook.)
    3. Place a mound of salad mixture in a chilled bowl
    4. Slice grilled chicken into julienne strips and place on salad mixture
    5. Arrange orange slices and strawberries around perimeter of bowl, then drizzle with remaining dressing over entire salad
    6. Garnish with shredded carrots

    Serves 2.
