Halibut Summer Salad

List of Ingredients
26-oz. portion of halibut
1 golden bell pepper
1 red bell pepper
1 red onion
1 bunch asparagus
1 zucchini, sliced
1 yellow squash
Olive oil, salt and pepper to taste
Dressing (See recipe below.)Recipe
Grill all vegetables on a barbecue grill or in oven on broil. Lightly baste vegetables with olive oil, salt and pepper. Be careful if grilling inside. Pull vegetables off, cool slightly and cut julienne-style. Grill halibut for approximately 8 to 10 minutes. Toss all ingredients in vinaigrette and lay halibut on top.
Note: For garnish, use your preference of lettuce and 1 large tomato cut into 8 wedged pieces.
Dressing
Ingredients
1/2 cup balsamic vinegar
Juice of 2 lemons
2 Tbsp. garlic, minced
1/4 cup fresh basil
1-1/2 cups olive oil
Instructions
Put all ingredients in blender excluding oil. On low, slowly pour olive oil in blender.
