Hot Bacon And Bourbon Dressing

List of Ingredients
1 lb. Nino's maple bacon (sliced ½-inch)
2 c. red onion (sliced ¼-inch)
½ c. green onion (sliced ¼-inch)
1 tbsp. garlic cloves (sliced fine)
4 c. medium-large white mushrooms (sliced ¼-inch)
2 tbsp. Dijon smooth mustard
2 tbsp. whole-grain Dijon mustard
2 tbsp. brown sugar
6 oz. Bourbon whiskey
½ cup parmesan cheese (grated)
1 tsp. cracked black pepper
Salt (as needed)
2 c. croutons
2 10-oz. bags baby-leaf spinach
Recipe
In a medium-sized pan, sauté bacon until crisp over medium heat.
Leave bacon grease in pan and add red onions, green onions and garlic. Sauté for 1 minute.
Add mushrooms and continue to sauté for 2 to 3 minutes, or until mushrooms are tender.
Add mustards, brown sugar and Bourbon.
Ignite Bourbon with match, or by pulling pan toward flame (being cautious to hold pan over an open area).
When flames extinguish, stir and sprinkle in black pepper.
Remove dressing from the heat.
Taste and season with salt if desired.
Place spinach in large mixing or serving bowl, and pour hot dressing over greens.
Sprinkle salad with grated parmesan cheese and portion onto plates.
Add garnishment of croutons. Serve.
