    1 pound macaroni pasta
    1 tablespoon olive oil
    1 cup low-fat mayonnaise (2 fat grams per tablespoon)
    6 tablespoons no-sugar-added sweet pickle relish
    1/4 cup reduced-fat sour cream
    1/4 cup low-fat buttermilk
    1 large sweet onion, peeled and diced

    1 1/2 cups fresh snow peas, strings removed and chopped
    8 ounces 2 percent sharp cheddar cheese, grated
    1 medium green bell pepper, cored and diced
    1 medium red sweet pepper, core removed and diced

    Salt and fresh ground black pepper to taste

    Over high heat, bring a large pot two-thirds full of water to a boil. Stir in macaroni and cook exactly as the package directs (firm is better than too soft). Drain the macaroni, pour into a large mixing bowl, add olive oil and with a large rubber spatula stir and fold until coated.

    Add the mayonnaise, relish, sour cream, buttermilk, onion, snow peas, bell peppers, salt and pepper; stir and fold until combined and well coated. Cover and refrigerate. Serve chilled.

    Serves 12.
