Mushroom Salad with Lemon & Yogurt

1/2 cup DANNON® Plain Yogurt
2 teaspoons chopped fresh dill, tarragon or coriander (or 1 teaspoon dried)
1 tablespoon lemon juice
2 cups sliced fresh mushrooms
2 tablespoons thinly sliced red onion
salt and pepper (optional)Recipe
1. In a medium bowl, combine yogurt, dill (or tarragon or coriander) and lemon juice. Mix well.
2. Add mushrooms and onion. Toss well. Add salt and pepper to taste.
3. Refrigerate no more than 2 hours or refrigerate yogurt mixture and mushrooms and onions separately and toss immediately before serving.
Yield: 4 servings
