With Boiled Creamy Dressing
List of Ingredients
Boiled Creamy Dressing:
3 tablespoons all-purpose flour
2 teaspoons dry mustard
1 teaspoon salt
1 tablespoon sugar
2 large eggs, lightly beaten
6 tablespoons vinegar (we use distilled white vinegar)
¾ cup milk
3 tablespoons butter
4 tablespoons commercial sour cream
Coleslaw:
6 cups shredded green cabbage
Cold water
½ cup grated carrots
¼ cup grated onions
1 teaspoon caraway seeds Recipe
To make boiled dressing: Combine all ingredients except sour cream in a nonreactive heavy saucepan with a whisk. Cook over medium heat, whisking constantly, about 8 minutes or until mixture thickens. Remove from heat, whisk in sour cream and let cool before using.
To make slaw: Place cabbage in a large bowl and cover with cold water. Refrigerate at least 2 hours to crisp. Drain and dry well. Place cabbage in a nonreactive large salad bowl and mix well with carrots, onions and caraway seeds. Toss with boiled dressing shortly before serving. Makes 6 servings.
