Orzo Pasta Salad

List of Ingredients
10 lbs. orzo pasta
4 lbs. mushroom (domestic, cremini, shiitake)
4 lbs. pearl onions
5 lbs. roasted yellow peppers
Vinaigrette:
2 cups olive oil
1/4 cup lemon juice
1/4 cup white wine vinegar
2 tbs. lemon zest
1 cup fresh herbs (oregano, thyme, parsley)
Salt and pepper to tasteRecipe
# Cook pasta until done, not al dente, and toss with oil.
# Clean and cut mushrooms in quarters, sauté and season with salt and pepper; cool down.
# Toss onions in oil, season with salt and then roast.
# Seed, season, and roast peppers - no color, 1/4" diced and set aside.
# Combine pasta, onions, and peppers.
# Make vinaigrette by mixing all ingredients and add to pasta, taste for seasoning.
