List of Ingredients
Marinade for Chicken
1/2 cup soy sauce
1 tbsp olive oil
2 garlic cloves
1 small finger ginger
1. Mix soy sauce and olive oil.
2. Add slivered garlic.
3. Add grated ginger.
4. Marinate chicken for 30 minutes or more.
5. Grill. Chop in cubes or fan-cut. Set aside.
Salad Ingredients
Small batch of baby arugula
1/5 lb. of Napa cabbage
1/5 lb. of purple cabbage
1/4 lb. of mache
1/4 lb. snow peas
Handful of bean sprouts
1 carrot
1 small daikon
1 cup of mandarin orange segments
1 Asian pear
Handful of peanuts - optional
Handful of macadamia nuts - optional
1 bunch cilantro
2 stalks of green onion
1 small bunch of rice noodles
1 cup of oilRecipe
1. Strand cut cabbages add to large mixing bowl.
2. Add baby arugula and mache.
3. Add snow peas and bean sprouts.
4. Add julienned shavings of carrot and daikon.
5. Add triangle cut pears.
6. Add mandarin segments.
7. Add nuts.
8. Add chopped cilantro and segmented green onion.
9. Add dressing and toss.
10. Fry rice noodles and pat dry and garnish on top of salad.
Salad Dressing
1 tbsp of sesame oil
2 tbsp of olive oil
3-second count slow drizzle rice wine vinegar
Few dashes of chili oil
1 tbsp of Yuzu juice
Salt to taste
1. Add Vinegar to mixing bowl.
2. Add Yuzu juice or other citrus.
3. Drizzle in sesame and olive oils and emulsify.
4. Add salt to taste, dash with chili oil.
5. Set aside.
