with Tarragon Mustard Sherry Vinaigrette

List of Ingredients
½ cup - Spring Peas Blanched in salted water
½ cup - Pea Pods cut on a bias & removed the strings ? blanched
½ cup - English Peas Blanched
½ cup - Sugar Snap Peas Blanched
½ cup - Pea Tendrils Blanched
1 cup - Heirloom Finger Potatoes Sliced 1 inch and blanched
¼ cup - Red Shallots Lightly sweated
Fresh Tarragon 1 Tbsp.
Radicchio Cups 4
Spanish Sherry Vinegar 3 oz.
Dry Dijon Mustard 2 tablespoons
5 oz. olive oil
Kosher Salt to taste
Ground fresh black pepper to taste
Recipe
Mix in bowl: Peas, potatoes, shallots, Pea Tendrils.
In a separate bowl: mix the dry Dijon mustard, sherry vinegar, bruise the tarragon & then add tarragon, whisk in the oil & adjust seasoning, toss pea salad with light coating of vinaigrette, serve in radicchio cups.
