    Roasted Anaheim Mighty Duck Salad

    List of Ingredients




    3 cups julienne roasted duckling
    1 cup julienne cucumber
    ¼ cup thinly sliced scallions
    1 cup julienne carrot
    1T black sesame seeds
    1T toasted white sesame seeds
    ½ pound cooked, drained and cooled buckwheat soba noodles tossed in 2T dark sesame oil to prevent sticking together
    ¼ cup fresh mint leaves
    ¼ cup fresh cilantro leaves

    Recipe



    Toss all the ingredients together except the duck.
    Divide onto plates
    Garnish with the roasted duck and serve passing the vinaigrette at the table.
    Vinaigrette


    1T grated ginger
    ¼ cup soy sauce
    3T sugar
    2T peanut butter
    2T minced fresh cilantro
    2T minced scallion
    1T dark sesame oil
    3T peanut oil
    4T rice wine vinegar, plus more to taste.
    Place all the ingredient in a blender and pulse to combine. Slowly add the vinegar until dressing is to your liking. Serve.

    Serves 4 as a lunch salad, or 6 as a dinner’s first course
