Santa Fe Salad

List of Ingredients
1 each red, blue, white corn tortillas, cut in 1/4-inch strips
Vegetable oil (for frying tortilla strips)
5 ounces romaine lettuce, cut in 1-inch pieces
4 ounces Santa Fe Dressing (recipe follows)
1/2 teaspoon Cajun Spice Mix (recipe follows, or use store-bought Cajun spice)
2 ounces red onion slices, cut in quarters
1/3 avocado, diced
2 ounces diced tomato
2 ounces roasted red pepper, 1/2-inch diced
2 ounces diced mozzarella cheese
1 tablespoon roasted corn (washed canned corn can be substituted)
1 chicken breast or 6-ounces shrimp, blackened Recipe
Cut tortillas into 1/4-inch strips and fry in vegetable oil until crisp. Drain on paper towels. Toss lettuce, onion, avocado and tomato with dressing and 1/2 teaspoon Cajun spice mixture. Place salad on big plate and surround with corn tortilla strips. Sprinkle cheese over salad. Sprinkle corn on salad.
To blacken chicken or shrimp, heat up a castiron skillet and add one teaspoon vegetable oil for each chicken breast or portion of shrimp. Dust chicken or shrimp thoroughly with blackening spice. Place carefully in skillet and cook until done. Place blackened chicken -- slightly fanned -- or shrimp on top of salad.
