List of Ingredients
5 cups mixed greens, such as mesclun, spinach, dark green lettuce
1 1/2 cups garbanzo beans
(chick peas)
1/2 cup red onion, chopped or in rings
1 cup cooked chicken breast, cubed
1 cup chopped cauliflower
1/2 cup walnut pieces
3 Tbs. chopped fresh herbs, such as parsley, basil or cilantro
Dressing:
6 Tbs. orange juice
2 tsps. balsamic vinegar
2 Tbs. canola oil or
extra virgin olive oil
2 crushed garlic cloves
Salt and pepper, to taste
Recipe
In a large bowl, combine salad ingredients. In a small bowl, whisk dressing. Toss together. Serves 4.
