West Coast Blackened Chicken Salad

List of Ingredients
5 cups mixed greens
1/3 C Tomato, diced
1/3 C Cucumber, diced
1/3 C Red onions, sliced thin
1/3 C Mushrooms, sliced thin
1/3 C Mandarin orange segments
1/3 C Crispy tortilla strips
4 oz. Mesquite ranch dressing
6 oz. Grilled chicken breast
1 tbsp. Blackened seasoning
1/4 Avocado slice
Mixed greens:
1/4 Iceberg lettuce, chopped
1/4 Romaine lettuce, chopped
1/8 C Carrots, shredded
1/8 C Red cabbage, shredded
Toss together.
Mesquite ranch dressing:
3 oz. Ranch dressing
1 oz. B.B.Q. sauce
1 tbsp. Mesquite seasoning
Mix well.Recipe
Blackened chicken breast:
Marinate chicken breast in Italian dressing (optional).
Grill chicken breast until done and remove from heat.
Rub blackening season on one side return to grill blackened side down.
Cook for 1-minute, remove and slice thin.
Directions:
Use a mixing bowl and add mixed greens, tomato, cucumber, red onions, mushrooms, mandarins, tortilla strips and dressing and mix well.
Pour into serving bowl top with chicken and avocado.
