½ Large ripe cantaloupe
¾ C Red bell pepper, finely diced
¼ C Cilantro, finely chopped
3 T Scallions (white and green part), finely chopped
Juice of one lime
Pinch of salt
Red pepper flakes, to taste Recipe
Peel cantaloupe and remove seeds. Chop cantaloupe into very small dice and put into a bowl. Add diced red pepper, chopped cilantro, scallions and lime juice. Stir. Add salt and crushed red pepper flakes. Chill.
Makes about 4 servings.
Serve it with grilled chicken, fish or steaks.
