Salsa a la Veracruzana

1 1/2 cups olive oil
6 cloves garlic, whole, plus 8 cloves garlic, minced
4 cups white onion, finely chopped
4 1/2 pounds tomatoes, finely chopped
1 1/2 cups pimento-stuffed green olives, finely chopped
1/2 cup capers
12 fresh bay leaves or 6 dried bay leaves
1 tablespoon oregano, dried and crushed
3 sprigs marjoram or 1 teaspoon dried marjoram
Salt to taste
1 teaspoon freshly ground pepper
1 1/2 cups jalapenos, sliced
Recipe
Heat oil in a saucepan or frying pan. Brown 6 garlic cloves, and discard. Add minced garlic and onion, and brown. Add tomato, olives, capers, jalapenos, bay sprig, oregano, thyme, marjoram, salt, and pepper.
Simmer for 2 1/2 hours, stirring occasionally. Sauce will be thick. Remove from heat. Set aside.
