1 8-ounce package (1-1/3 cups) chopped pitted dates
1 cup bottled chili sauce
1 teaspoon finely shredded orange peel
1/2 cup orange juice
1/3 cup finely chopped onion
1 - 2 tablespoons finely chopped fresh hot chili peppers*
6 cups assorted dippers (such as tortilla chips, jicama sticks, cucumber slices, radishes, and/or cherry tomatoes)
2 - 3 pieces shredded orange peel (optional)
2 - 3 pieces shredded lime peel (optional)
Recipe
. In a small saucepan combine the dates, chili sauce, orange peel, orange juice, onion, and hot peppers. Bring just to boiling. Cool slightly; cover and chill in refrigerator at least 3 hours.
2. Serve dip with tortilla chips, jicama, cucumber, radishes, and cherry tomatoes. Garnish with shredded orange and lime peel, if desired. Makes 2-1/4 cups (thirty-six 1-tablespoon servings).
*Note: The amount of hot chili peppers you use will vary with the heat of the pepper and your fondness for spicy food.
Because fresh chili peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chili peppers, cover your hands with plastic bags or wear plastic or rubber gloves. If your bare hands do touch the chili peppers, wash your hands well with soap and warm water.
Make-Ahead Tip: Prepare as above. cover and chill in the refrigerator up to 48 hours.
