medium apples, cored & thinly sliced 1
30 ml fresh lemon juice 2 tbsp
250 ml onion, thinly sliced 1 cup
1 medium red pepper, cut into thin strips 1
1 medium green pepper, cut into thin strips 1
15 ml cooking oil 1 tbsp
227 g cooked turkey breast, cut into thin strips 8 oz
6 pita bread rounds, lightly toasted 6
125 ml plain yogurt 1/2 cup
Recipe
Toss apple in lemon juice; set aside. In a large nonstick skillet, cook onion and peppers, stirring occasionally in hot oil until tender crisp. Stir in turkey, cook and stir until heated through. Stir in apple mixture.
Fold pita rounds in half and fill with turkey mixture; drizzle with yogurt. Serve warm.
