Bistro Beef Sandwich

List of Ingredients
3 Tbsp. pitted black olives
1 Tbsp. green onions
1 Tbsp. olive oil-based vinaigrette dressing
1/2 tsp. dry basil leaves
8 slices good-quality white bread
2 tsp. Dijon mustard
8 thin slices 98 percent fat-free roast beef
1/2 cup roasted red pepper
2 tomatoes
4 thin slices Provolone cheese
Lettuce leaves
Recipe
Combine chopped olives, chopped green onions, dressing and basil; set aside. Lightly spread 4 slices of bread with Dijon mustard. Top each with 2 slices meat (total of about 2.6 ounces). Divide olive mixture and drained, coarsely chopped, roasted red peppers evenly over sandwiches. Top with sliced tomatoes, cheese, lettuce and remaining bread.
