Grilled Cheese

8 slices sourdough bread, sliced 1/2" thick
2 tbsp butter or margarine
4 eggs
1/2 cup diced ham
1/4 cup diced green pepper
1/4 cup diced onion
8 oz brick of sharp (or extra sharp) cheddar cheese
4 tbsp butter or margarine, softened
salt and pepper to tasteRecipe
Melt 2 tbsp butter or margarine in 10" Teflon® coated non-stick skillet over medium-high heat. Add onions and peppers and sauté for 2 minutes. Crack eggs into medium bowl and stir with wire whisk or fork until smooth (30 seconds). Pour eggs into skillet with onions and peppers. Sprinkle ham evenly over all. Place lid on skillet and cook for two minutes, or until light brown on bottom and top is beginning to set. Using large non-metal spatula, carefully turn mixture to brown the other side. Cook with lid for an additional two minutes. Remove from heat, and slide eggs onto plate. Cut into 4 equal portions. Return skillet to burner over medium heat.
Slice cheese into 16 equal slices. Butter one side of each slice of bread, using 1/2 tbsp. of butter per slice. Place 4 slices of bread buttered side down on skillet. Layer two slices of cheese on each slice, followed by 1 portion of egg, two additional slices of cheese and top with slice of bread. Grill for 5 minutes on each side or until evenly browned. Makes 4 sandwiches.
