2 slices fresh whole wheat bread
1 slice Cabot Classic Vermont Sharp Cheddar cheese
1 slice Cabot Chipotle Cheddar
1/4 cup fresh strawberries
1/4 cup fresh raspberries
1/4 cup sugar

In a food processor, blend strawberries, raspberries, and sugar till a chunky, yet not pureed mixture is created. Set aside mixture.
Cut slices of Cabot cheese in half, creating a total of four half-slices. Butter one side of one slice whole wheat bread and place butter side down in a Teflon® coated non-stick skillet. At this point the frying pan is not on the stove, as we are still in set-up. Place one half slice of Cabot Classic Vermont Sharp Cheddar cheese and one half slice of Cabot Chipotle Cheddar on the bread. Spread 3/4 of berry mixture over slices of cheese. Cover berry mixture with remaining half slices of cheese. Alternating half slice placement from first side of bread. Butter one side of remaining slice of bread and place butter side up on top of cheese. Fry both sides of sandwich till slightly browned, taking care when flipping. Serve with remaining berry mix on top. Makes 1 sandwich.
