1/3 cup Cattlemens Tumbleweed Seasoning
¼ Cup Cattlemens Pork Rib Spice
16 ounces Olive Oil18 ounces Beef Tenderloin
2 each tomatoes,
5x61 ounce Chipotle Chili in Adobo Sauce
4 Jalapeno Cheese Foccacia Rolls
½ teaspoon Black Pepper
4 Ears White Corn on the Cob, In Husk
2 Each Red Bell Peppers
1 each Wax Chilies
1 each Jalapeno Pepper
3 tablespoons Cup Red Wine Vinegar
1 tablespoon Lemon Juice
¼ cup Cilantro½ cup Parsley
1 teaspoon Salt Mixed Wild Greens
Recipe
Marinade
1. Combine Tumbleweed seasoning with Pork Spice and Olive Oil in mixing bowl.
2. Slice Tenderloin into 2 oz slices. Moisten sheet of plastic wrap with Olive Oil. Place one slice of Tenderloin on plastic wrap.
3. Fold plastic over meat and pound Tenderloin lightly with Mallet to 1/8 inch-thickness. Place in a storage container and add 1 cup of prepared marinade to Tenderloin.
4. Place in refrigeration for 3-4 hours and reserve remaining Marinade for later use.
1. Slice Foccacia rolls in half and place on hot grill for approximately 1 minute.
2. Grill 6 oz of Tenderloins for 15-20 sec, turn and grill another 15-20 sec. Meat should be rare.
3. Place ¼ of Tomatoes on bottom of roll, add grilled Tenderloin, Place top of roll on Sandwich.
4. Slice sandwich in thirds and place on dinner plate.
