List of Ingredients
2 slices fresh double-baked rye (rye bread that has a crunchy crust
and soft center)
Softened butter
2 slices Swiss cheese
Drained sauerkraut
6 ounces corned beef or pastrami, steamed
D.Z.'s Thousand Island Dressing (see accompanying recipe)Recipe
Spread a thin layer of butter on one side of each slice of bread.
Place the bread slices butter side down on a hot grill or pan.
Place one slice of Swiss cheese on each slice of bread while the
slices are grilling. Once the cheese starts to melt, take a small
handful of drained sauerkraut and place it on one of the grilling
pieces of rye.
Place corned beef or pastrami on top of sauerkraut. Be careful not to
burn the bread; you want a nice golden brown.
Top meat with the second slice of grilled bread. Cut sandwich in half
and enjoy with Thousand Island Dressing.
D.Z.'s Thousand Island Dressing
Makes about 3/4 cup
1/2 cup mayonnaise
1 tablespoon ketchup
1 tablespoon white vinegar
2 teaspoons sugar
2 teaspoons sweet pickle relish
1 1/2 teaspoons finely minced white onion
1/8 teaspoon salt
Combine all of the ingredients in a small bowl. Stir well. Place
dressing in a covered container and refrigerate for several hours,
stirring occasionally so that the sugar dissolves and the flavors
blend.
